Rocky Road is a classic dessert that combines rich chocolate with marshmallows, nuts, and sweets, perfect for any celebration.

Ingredients
  

Chocolate Base
  • 8 oz dark chocolate melts or chips Can also use block, chopped
  • 8 oz milk chocolate melts or chips Can use more dark chocolate
  • 2 tbsp coconut oil Can use any plain flavored oil to prevent cracking
Mix-ins
  • 3 cups marshmallows Use pink and white marshmallows, most cut in half; pack firmly
  • 3/4 cup raspberry lollies Halved
  • 1/3 cup desiccated coconut Can use unsweetened flakes
  • 1/2 cup unsalted peanuts Very roughly chopped

Method
 

Preparation
  1. Line a 20cm/8-inch square pan with baking paper.
  2. In a bowl, melt chocolate and coconut oil in the microwave in 30-second increments, stirring in between, until melted and smooth.
Mixing
  1. Stir the add-ins (marshmallows, raspberry lollies, desiccated coconut, and peanuts) into the melted chocolate.
  2. Pour the mixture into the lined pan and spread out evenly.
Chilling
  1. Refrigerate for 3 hours or until fully cool.
Serving
  1. Remove from the fridge 30 minutes prior to cutting.
  2. Cut into 5 lines, then into chunks for eating or larger pieces for gifting.

Notes

Store Rocky Road in an airtight container in the fridge for up to one week. For longer storage, wrap tightly in plastic wrap and freeze.
