Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved baby potatoes, broccoli florets, and thickly sliced carrots.
  3. Toss the sausage chunks into the bowl with the veggies.
  4. Drizzle the olive oil, garlic powder, smoked paprika, thyme, oregano, salt, and pepper over the mixture.
  5. Stir until all the ingredients are well coated with oil and spices.
Cooking
  1. Spread the mixture evenly on a large baking sheet.
  2. Roast in the preheated oven for 25–30 minutes, or until the sausages are golden and the veggies are tender.
  3. If desired, sprinkle freshly chopped parsley on top for added flavor and a pop of color before serving.
