Ingredients
  

For the Roasted Grapes
  • 2 cups red seedless grapes, stems removed Fresh, ripe grapes for best flavor.
  • 1 tsp olive oil
  • a pinch salt
For the Whipped Cheese
  • 8 oz soft goat cheese High-quality goat cheese for best flavor.
  • 2 tbsp cream cheese
  • 1 tbsp honey Adjust sweetness to taste.
For the Topping
  • Walnuts (to taste) Walnuts, chopped Can substitute with pecans or omit for nut-free version.
  • Fresh rosemary (a few sprigs) Fresh rosemary, chopped Add to walnuts for flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the grapes with olive oil and a pinch of salt. Spread the grapes evenly on a baking sheet.
Roasting
  1. Roast the grapes for about 20 minutes, until they become soft and slightly caramelized.
Whipping Cheese
  1. In a bowl, combine the goat cheese, cream cheese, and honey. Whip them together until smooth and creamy.
Toasting Walnuts
  1. In a pan, lightly toast the walnuts with fresh rosemary until fragrant, about 4-5 minutes.
Serving
  1. Serve the warm roasted grapes alongside the whipped goat cheese, topped generously with the rosemary-honey walnuts.
