Preparation

- Toss the cherries with 2 tablespoons of aged balsamic and 2 teaspoons of honey.
- Roast in a baking dish for 15–18 minutes, until juicy, bubbling, and syrupy.
Toast Bread
- Brush the sourdough slices with olive oil.
- Toast them in a hot skillet or under the broiler until crisp and golden.
- Sprinkle with flaky salt.
Assembly
- Place one warm toast on each plate.
- Gently place half a burrata on top of each slice.
- Spoon the warm balsamic-roasted cherries and their juices over the burrata.
- Drizzle with extra aged balsamic, and top with fresh herbs like basil, mint, or thyme if using.
- Serve immediately.
