A delightful combination of roasted cherries and creamy burrata on crispy sourdough toast, perfect for breakfast or a light snack.

Ingredients
  

For the Toast
  • 4 slices thick slices of sourdough bread Choose high-quality sourdough
  • to taste Olive oil, for brushing
  • to taste Flaky sea salt
For the Topping
  • 2 balls whole burrata (room temp)
  • 300 g fresh dark cherries, pitted Approximately 2 cups
  • 2 tbsp aged balsamic vinegar
  • 2 tsp honey or maple syrup
  • to taste Fresh thyme leaves (optional)
  • to taste Extra aged balsamic (for drizzling)
  • to taste Fresh basil or mint leaves (optional)

Method
 

Preparation
  1. Preheat the oven to 200°C (400°F).
  2. Toss the cherries with 2 tablespoons of aged balsamic and 2 teaspoons of honey.
  3. Roast in a baking dish for 15–18 minutes, until juicy, bubbling, and syrupy.
Toast Bread
  1. Brush the sourdough slices with olive oil.
  2. Toast them in a hot skillet or under the broiler until crisp and golden.
  3. Sprinkle with flaky salt.
Assembly
  1. Place one warm toast on each plate.
  2. Gently place half a burrata on top of each slice.
  3. Spoon the warm balsamic-roasted cherries and their juices over the burrata.
  4. Drizzle with extra aged balsamic, and top with fresh herbs like basil, mint, or thyme if using.
  5. Serve immediately.

Notes
