A delightful combination of roasted cherries and creamy burrata served on crispy sourdough toast, perfect for breakfast or a light snack.

Ingredients
  

For the toast
  • 4 slices thick slices of sourdough bread Use fresh, crusty sourdough.
  • Olive oil, for brushing To achieve a golden toast.
  • Flaky sea salt For sprinkling on the toast.
For the topping
  • 2 balls whole burrata balls (room temp) Bring to room temperature before using.
  • 300 g fresh dark cherries, pitted Alternatively, use frozen cherries (thawed).
  • 2 tbsp aged balsamic vinegar Adds depth of flavor.
  • 2 tsp honey or maple syrup Use honey for a more robust sweetness.
  • Fresh thyme leaves (optional) For garnish and added flavor.
  • Extra aged balsamic (for drizzling) To enhance the presentation.
  • Fresh basil or mint leaves (optional) To garnish the dish.

Method
 

Preparation and Roasting
  1. Preheat the oven to 200°C (400°F).
  2. Toss the cherries with 2 tablespoons of aged balsamic and 2 teaspoons of honey.
  3. Roast in a baking dish for 15–18 minutes, until juicy, bubbling, and syrupy.
Toasting the Bread
  1. Brush the sourdough slices with olive oil.
  2. Toast them in a hot skillet or under the broiler until crisp and golden.
  3. Sprinkle with flaky salt.
Assembly
  1. Place one warm toast on each plate.
  2. Gently place half a burrata on top of each slice.
  3. Spoon the warm balsamic-roasted cherries and their juices over the burrata.
  4. Drizzle with extra aged balsamic, and top with fresh herbs like basil, mint, or thyme if using.
  5. Serve immediately.

Notes
