Ingredients
  

For the Toast
  • 4 slices thick slices of sourdough bread
  • 1 tbsp Olive oil for brushing
  • to taste Flaky sea salt
  • 2 balls whole burrata (room temp)
For the Roasted Cherries
  • 300 g fresh dark cherries, pitted about 2 cups
  • 2 tbsp aged balsamic vinegar
  • 2 tsp honey or maple syrup
  • to taste Fresh thyme leaves optional
  • to taste Extra aged balsamic for drizzling
  • to taste Fresh basil or mint leaves optional

Method
 

Roasting the Cherries
  1. Preheat the oven to 200°C (400°F). Toss the cherries with 2 tablespoons of aged balsamic and 2 teaspoons of honey. Roast in a baking dish for 15–18 minutes, until juicy, bubbling, and syrupy.
Preparing the Toast
  1. Brush the sourdough slices with olive oil. Toast them in a hot skillet or under the broiler until crisp and golden. Sprinkle with flaky salt.
Assembling the Dish
  1. Place one warm toast on each plate. Gently place half a burrata on top of each slice. Spoon the warm balsamic-roasted cherries and their juices over the burrata.
  2. Drizzle with extra aged balsamic, and top with fresh herbs like basil, mint, or thyme if using. Serve immediately.

Notes
