Method
Roasting the Cherries
- Preheat the oven to 200°C (400°F). Toss the cherries with 2 tablespoons of aged balsamic and 2 teaspoons of honey. Roast in a baking dish for 15–18 minutes, until juicy, bubbling, and syrupy.
Preparing the Toast
- Brush the sourdough slices with olive oil. Toast them in a hot skillet or under the broiler until crisp and golden. Sprinkle with flaky salt.
Assembling the Dish
- Place one warm toast on each plate. Gently place half a burrata on top of each slice. Spoon the warm balsamic-roasted cherries and their juices over the burrata.
- Drizzle with extra aged balsamic, and top with fresh herbs like basil, mint, or thyme if using. Serve immediately.
