Ingredients
  

Main Ingredients
  • 1 kilo mixed fruit Use any mixed dried fruits such as raisins, currants, or dried cherries.
  • 750 mls orange and apple juice and brandy Could replace brandy with extra fruit juice for a non-alcoholic version.
  • 2 cups self-raising flour

Method
 

Preparation
  1. Soak the mixed fruit in the orange and apple juice along with the brandy for 24 hours.
  2. After soaking, stir in the self-raising flour until it’s well mixed.
  3. Place the mixture into a loose-bottomed cake tin.
Cooking
  1. Put the cake tin inside a slow cooker and fill it with water until it reaches halfway up the cake tin.
  2. Cook on low for 8 hours.
  3. To keep the cake moist, place a tea towel over the top of the slow cooker before putting on the lid.
Cooling
  1. Once done, cool the cake for a bit before turning it out of the tin.

Notes

Wrap tightly in plastic wrap and store in an airtight container. It can remain at room temperature for about a week or be stored in the refrigerator or frozen. Ensure to soak the fruit well and do not rush the cooking process.
