Ingredients
  

For the Salad
  • 2 cups Shredded cabbage (green or red) Use fresh and crisp cabbage.
  • 1 large Cucumber, thinly sliced For uniform slices, consider using a mandoline.
  • ½ Red onion, thinly sliced
  • ¼ cup Fresh dill, chopped Fresh herbs enhance flavor.
  • ¼ cup Fresh parsley, chopped Can substitute with other herbs like cilantro.
For the Dressing
  • 2 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar Adjust to taste.
  • 1 tablespoon Lemon juice Freshly squeezed is best.
  • 1 teaspoon Honey or agave syrup For sweetness.
  • To taste Salt and pepper Season according to preference.

Method
 

Preparation
  1. Shred the cabbage and place it in a large salad bowl.
  2. Thinly slice the cucumber and add to the bowl along with the red onion.
  3. Finely chop the dill and parsley, then stir them into the salad.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, honey (or agave), and season with salt and pepper until smooth.
Assemble the Salad
  1. Pour the dressing over the vegetable mixture and gently toss to ensure everything is coated.
  2. Let it chill for at least 30 minutes in the fridge to let the flavors meld.
