  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1/2 cup onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 head cabbage, shredded (about 4–5 cups packed)
Sauce Ingredients
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Prep your ingredients: cut the chicken, shred the cabbage, slice the onion, and mince the garlic.
  2. In a bowl, mix the sauce ingredients until smooth.
Cooking
  1. Heat a large skillet over medium-high heat and add oil.
  2. Sear the chicken for about 3-4 minutes until it’s nearly cooked through, seasoning with salt and pepper.
  3. Push the chicken aside and toss in the onion and garlic, stir-frying until fragrant.
  4. Add the shredded cabbage and pour the sauce over everything, stirring constantly for 1-2 minutes to thicken.
  5. Taste and adjust the seasoning, then finish with a drizzle of sesame oil. Serve hot over rice or noodles.
