Ingredients

For the spice mix
  • 2 teaspoons brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
Main ingredients
  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon olive oil

Method

Preparation
  1. In a small bowl, mix together brown sugar, paprika, dried oregano, garlic powder, onion powder, salt, and black pepper until well combined.
  2. Pat the chicken breasts dry with paper towels to ensure a nice sear. Place them in a zip-top bag or between two layers of parchment paper. Use a meat mallet or rolling pin to pound them to an even thickness.
  3. Drizzle olive oil over the chicken breasts and rub it into both sides. Generously apply the spice mixture, coating every surface.
Cooking
  1. Lay the chicken in a single layer in the air fryer. Cook at 400°F for 8 minutes, then flip and continue cooking for an additional 5-12 minutes, or until the chicken reaches an internal temperature of 165°F at the thickest part.
Serving
  1. Let the chicken rest for 5 minutes before slicing and enjoying.

Notes

Store any leftover chicken in an airtight container in the fridge for 3-4 days; freeze for 2-3 months if needed. Brining in salted water for 30 minutes before cooking can enhance juiciness.
