- Cook elbow macaroni according to the package instructions and drain thoroughly.
- While the macaroni is cooking, brown and break up ground beef in a large skillet over medium-high heat until fully cooked. Drain excess fat.
- Add water and taco seasoning to the beef, blend well, and continue cooking for 4 minutes. Incorporate Rotel, blend well, and reduce heat to low.
- Finally, add the cooked macaroni noodles and queso, gently folding the queso and noodles with the beef until well blended.
Notes
This soup is fantastic when topped with hot sauce or taco sauce. For an extra touch, add your favorite taco toppings such as tomatoes, chopped lettuce, onions, jalapenos, sour cream, and more. Enjoy!
