Ingredients
  

Base Ingredients
  • 8 oz feta cheese, drained from brine Approximately 220 grams
  • 1/4 cup plain Greek yogurt
  • 1 cup unsweetened canned pumpkin puree
Flavoring Ingredients
  • 1-2 Tbsp honey Adjust for desired sweetness
  • 1 tsp dried thyme Or 2 tsp fresh thyme
  • Freshly cracked black pepper
Garnish and Serve
  • Chopped walnuts Raw or toasted
  • Additional fresh thyme For garnish
  • Crusty, toasted bread or crackers For dipping

Method
 

Preparation
  1. Blend the feta cheese and Greek yogurt in a food processor until smooth.
  2. Add in the pumpkin puree, honey, thyme, and black pepper; blend again until fully combined.
  3. Transfer the mixture to a covered bowl and chill in the refrigerator for at least 30 minutes.
  4. When ready to serve, pour the whipped feta into a bowl and garnish with walnuts, fresh thyme, an extra drizzle of honey, and more black pepper.

Notes
