For the cookies
  • 1 box spice cake mix or cinnamon cake mix (15.25 oz box) Feel free to use any spice cake mix you prefer, or even a gluten-free option.
  • 1 can pumpkin puree (15 oz can)
For the glaze
  • 1 1/4 cups powdered sugar
  • 3 tablespoons milk For a healthier twist, experiment with Greek yogurt instead of milk.
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix and pumpkin puree until a smooth batter forms.
  3. Use a tablespoon to drop portions of the dough onto a parchment-lined baking sheet, leaving about 2 inches between each cookie.
Baking
  1. Bake for 12 to 15 minutes, checking for the edges to set and a slight spring back when pressed.
Glazing
  1. While the cookies cool, whisk together the glaze ingredients until smooth.
  2. Once cooled, drizzle the glaze generously and allow it to set before serving.
