Preparation
- Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by spraying it with non-stick cooking spray.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, cloves, ginger, and pumpkin pie spice.
- In another bowl, beat the eggs, pumpkin puree, granulated sugar, light brown sugar, vanilla extract, and vegetable oil until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared baking dish and spread it evenly.
Baking
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the bars to cool completely in the pan.
Frosting
- For the frosting, beat the softened cream cheese and butter together until smooth and creamy.
- Mix in the vanilla extract, then gradually add in the powdered sugar and cinnamon until well combined.
- Once the pumpkin bars are cool, spread the frosting evenly on top.

Notes
To keep your pumpkin bars with frosting fresh, store any leftovers in an airtight container in the refrigerator. They can also be frozen for up to three months. Just be sure to wrap them tightly with plastic wrap and then foil to prevent freezer burn.
