- In a large skillet, melt 1 tablespoon of butter and heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the diced onions and bell peppers to the skillet. Cook until they are soft and translucent. Reduce the heat to low and add the minced garlic, cooking for 1 minute while stirring constantly. Transfer the cooked vegetables to a plate and cover to keep them warm.
- In the same skillet, melt the remaining 1 tablespoon of butter and heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
- Add the diced potatoes to the skillet and cook until they are golden brown, stirring several times to ensure even cooking.
- Pour in the water or chicken broth and quickly cover the skillet with aluminum foil or a lid. Cook until the potatoes are tender, stirring several times to prevent over-browning.
- Once the potatoes are tender, add the cooked vegetables back to the skillet and stir to combine and warm through.
- Season the Potatoes O'Brien with kosher salt and freshly ground black pepper to taste.
Notes
Potatoes O'Brien can be served as a breakfast side dish or as part of a hearty brunch. Feel free to customize by adding diced ham or shredded cheese for extra flavor. Leftovers can be stored in the refrigerator for up to 3 days.
