  • 3 large potatoes, thinly sliced
  • 2 tablespoons olive oil
  • salt, to taste
  • grated mozzarella, as needed
Beef Stuffing
  • 0.77 lb minced beef
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons tomato sauce
  • 6 sprigs coriander, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon curry powder
  • 1 teaspoon paprika

Method
 

  1. Prepare potatoes by peeling and slicing them thinly. Season with salt.
  2. On a parchment-lined baking sheet, layer grated mozzarella, then arrange potato slices on top, slightly overlapping. Drizzle with olive oil and ensure even coverage. Bake at 392°F for 30 minutes.
  3. For the stuffing, heat olive oil in a pan and sauté onion and garlic until soft. Add minced beef, breaking it apart as it cooks until browned.
  4. Stir in tomato sauce, seasonings, and coriander, cooking until well combined.
  5. Remove potatoes from oven, add another layer of cheese, then the beef mixture. Top with more cheese, roll carefully, and add cheese on top of the roll. Bake at 482°F for 5 minutes until the cheese is melted.
  6. After baking, slice the roll and serve.
