- Prepare potatoes by peeling and slicing them thinly. Season with salt.
- On a parchment-lined baking sheet, layer grated mozzarella, then arrange potato slices on top, slightly overlapping. Drizzle with olive oil and ensure even coverage. Bake at 392°F for 30 minutes.
- For the stuffing, heat olive oil in a pan and sauté onion and garlic until soft. Add minced beef, breaking it apart as it cooks until browned.
- Stir in tomato sauce, seasonings, and coriander, cooking until well combined.
- Remove potatoes from oven, add another layer of cheese, then the beef mixture. Top with more cheese, roll carefully, and add cheese on top of the roll. Bake at 482°F for 5 minutes until the cheese is melted.
- After baking, slice the roll and serve.
