  • 2 large Granny Smith Apples (grated or thinly sliced) Use tart apples to balance the sweetness.
  • 1 cup Milk (warm, not hot) Warm milk helps the batter mix smoothly.
  • 1 large Egg
  • 1 cup All-purpose flour You can substitute with whole wheat flour for a healthier option.
  • 1 tablespoon Granulated white sugar Adjust based on apple's sweetness.
  • 1 tablespoon Vanilla sugar Can substitute with regular sugar and vanilla extract.
  • 1/2 teaspoon Baking soda
  • 3 tablespoons Clarified butter For cooking pancakes.
  • Powdered sugar For serving.

Method
 

Preparation
  1. In a large mixing bowl, sift the flour. Add the granulated sugar, vanilla sugar, and baking soda. Stir to combine.
  2. Pour in the warm milk and crack in the egg. Mix everything together with a whisk or a fork until you have a smooth, lump-free batter.
  3. Slice the apples thinly and fold them into the mixture, ensuring they’re well-coated.
Cooking
  1. Place a non-stick frying pan over medium heat and add a tablespoon of cooking oil or clarified butter. Let it warm up.
  2. Once the pan is hot, spoon the batter to form pancakes. If you’re using apple slices, arrange a few pieces on each dollop of batter.
  3. Cook each pancake for about 1.5 minutes on one side until you see bubbles forming on the surface, then flip and cook for another 1.5 minutes or until golden brown.
Serving
  1. Serve the apple pancakes warm, sprinkled with powdered sugar or accompanied by your favorite jam.
