A whimsical and delicious way to celebrate Halloween, these pizza-stuffed pumpkins are stuffed with cheesy goodness and make for a fun family dinner.

Ingredients
  

Cheesy Filling Ingredients
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup finely grated Parmesan cheese
  • 1 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 2 cloves garlic, finely chopped
  • 1 Tbsp chopped fresh parsley
  • 1 tsp paprika
Pumpkin and Biscuit Ingredients
  • 1 tube Pillsbury Grands Southern Homestyle Biscuits (16.3 oz)
  • 1 cup unsalted butter
  • 16 count thin pretzel sticks (1-inch long)
  • 2 cups shredded cheddar cheese
  • Marinara sauce for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta, mozzarella, Parmesan, salt, pepper, garlic, parsley, and paprika. Stir until well blended.
  3. Hollow out your pumpkins by cutting off the tops and scooping out the insides.
Assembly
  1. Open the tube of biscuits and flatten each biscuit slightly.
  2. Fill each pumpkin with the cheesy mixture.
  3. Top each pumpkin with shredded cheddar cheese.
  4. Place the pumpkins in a baking dish and pour melted butter over them.
Cooking
  1. Bake for about 25–30 minutes, or until the biscuits are golden brown and the cheese is bubbly.
  2. Once done, stick a pretzel rod into the top of each pumpkin for decoration.
  3. Serve hot with marinara sauce on the side for dipping.

Notes

Choose smaller 'sugar pumpkins' for the best flavor. You can mix and match cheeses according to your taste, adding Italian herbs or pepperoni for more flavor.
