Preparation
- Preheat your oven to 400°F (200°C).
- Lightly flour your workspace and roll out the puff pastry. Cut it into small squares, about 3 inches each.
- Place a cube of brie in the center of each pastry square.
- Add a small dollop of fig honey or fig jam on top of the cheese.
- Fold the corners of the pastry over the filling to create a small pocket, and seal it with the beaten egg.
- Brush the tops of the pastries generously with more egg wash, and sprinkle with the chopped pistachios.
- Bake in the preheated oven for 15-20 minutes or until they turn a beautiful golden brown.
- Serve warm and enjoy the deliciousness!

Notes
These bites are best served warm right out of the oven. Store leftovers in a sealed container in the refrigerator for up to three days. Reheat in an oven at 350°F (175°C) for about 10-15 minutes.
