  • 1 whole English cucumber, chopped Regular cucumbers work too, peel for a smoother bite.
  • 2 whole limes, zested and juiced
  • 1/3 cup cilantro, roughly chopped
Optional Seasoning
  • Salt To taste, optional.
  • Pepper To taste, optional.

Method
 

Preparation
  1. In a large mixing bowl, combine the chopped pineapple and cucumber.
  2. Add the lime juice and zest to the bowl, followed by the roughly chopped cilantro.
  3. Toss the ingredients lightly to ensure everything is evenly coated and flavors are distributed.
  4. If desired, add a pinch of salt and pepper, mixing gently once more.
  5. Serve immediately or refrigerate in a covered container until you’re ready to dig in!
