Ingredients
  

For the Crust
  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 0.25 tsp salt
  • 0.75 cups cold unsalted butter, cubed
For the Filling
  • 1 cup crushed pineapple, well-drained Make sure to thoroughly drain to avoid sogginess.
  • 2 large eggs
  • 1 cup granulated sugar
  • 0.25 cups all-purpose flour
  • 0.5 tsp baking powder
  • 1 tsp vanilla extract
  • to taste Powdered sugar for dusting For presentation

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line a 9x13 inch baking pan with parchment paper.
Making the Crust
  1. In a medium bowl, combine 1.5 cups flour, 0.5 cups sugar, and 0.25 tsp salt.
  2. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the prepared pan and bake for 15 minutes, or until lightly golden.
Creating the Filling
  1. In another bowl, whisk together 2 eggs and 1 cup sugar until smooth.
  2. Gradually add 0.25 cups flour, baking powder, and vanilla extract, stirring well.
  3. Gently fold in the well-drained crushed pineapple.
Baking
  1. Pour the pineapple filling over the warm crust.
  2. Return the pan to the oven and bake for an additional 25-30 minutes, until the center is set and the edges are golden brown.
Serving
  1. Allow the bars to cool completely.
  2. Dust with powdered sugar and slice into squares for serving.
