- In a large bowl, combine your thinly sliced mixed bell peppers and onions.
- In a medium saucepan, combine white vinegar, apple cider vinegar, sugar, mustard seeds, celery seeds, turmeric, salt, black pepper, and optional red pepper flakes.
- Over medium heat, bring the mixture to a boil while stirring to dissolve the sugar completely.
- Once boiling, pour the hot vinegar mixture over the sliced peppers and onions, stirring well to combine.
- Let the relish cool to room temperature before transferring it to airtight containers or jars.
- Refrigerate for at least 24 hours before serving to allow those delicious flavors to meld together.
