Ingredients
  

Vegetables
  • 4 cups mixed bell peppers, thinly sliced Feel free to mix and match colors.
  • 2 large onions, thinly sliced Different varieties can be used.
Pickling Solution
  • 1 cup white vinegar
  • 1 cup apple cider vinegar
  • 1 cup granulated sugar Adjust to taste.
Spices
  • 1 tablespoon mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes Optional for heat.

Method
 

Preparation
  1. In a large bowl, combine your thinly sliced mixed bell peppers and onions.
  2. In a medium saucepan, combine white vinegar, apple cider vinegar, sugar, mustard seeds, celery seeds, turmeric, salt, black pepper, and optional red pepper flakes.
  3. Over medium heat, bring the mixture to a boil while stirring to dissolve the sugar completely.
  4. Once boiling, pour the hot vinegar mixture over the sliced peppers and onions, stirring well to combine.
  5. Let the relish cool to room temperature before transferring it to airtight containers or jars.
  6. Refrigerate for at least 24 hours before serving to allow those delicious flavors to meld together.

Notes
