Preparation
- Preheat the oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until combined. Press this mixture into the bottom of the pan to form a crust.
- Bake the crust for 8-10 minutes, then cool slightly.
Filling
- In another mixing bowl, beat the softened cream cheese and 2/3 cup of sugar until smooth.
- Add the eggs one at a time, mixing just until combined after each addition. Stir in the vanilla extract and sour cream.
- Pour the cream cheese filling over the cooled crust. Drop spoonfuls of strawberry preserves on top and use a knife to swirl them into the filling.
Baking
- Bake in the preheated oven for 35-40 minutes, or until the filling is set.
- Allow to cool for 1 hour at room temperature, then refrigerate for at least 4 hours.
- Once chilled, slice into squares and garnish with fresh strawberries if desired.
Notes
For best results, ensure the cream cheese is softened to room temperature for a smoother filling. Gently swirl the strawberry preserves for a beautiful presentation. Wrap tightly in plastic wrap for freezing, lasting up to three months. Can substitute preserves for other flavors like raspberry or blueberry for variation.
