Ingredients
  

Crust Ingredients
  • 2 cups graham cracker crumbs Can substitute with gluten-free graham cracker crumbs for a gluten-free option.
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
Filling Ingredients
  • 2 packages Philadelphia cream cheese, softened 8 oz packages.
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sour cream Can be substituted with Greek yogurt.
  • 1/2 cup strawberry preserves or sauce More preserves can be added for stronger flavor.
  • Fresh strawberries for garnish (optional) For decoration and extra flavor.

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until combined. Press this mixture into the bottom of the pan to form a crust.
  3. Bake the crust for 8-10 minutes, then cool slightly.
Filling
  1. In another mixing bowl, beat the softened cream cheese and 2/3 cup of sugar until smooth.
  2. Add the eggs one at a time, mixing just until combined after each addition. Stir in the vanilla extract and sour cream.
  3. Pour the cream cheese filling over the cooled crust. Drop spoonfuls of strawberry preserves on top and use a knife to swirl them into the filling.
Baking
  1. Bake in the preheated oven for 35-40 minutes, or until the filling is set.
  2. Allow to cool for 1 hour at room temperature, then refrigerate for at least 4 hours.
  3. Once chilled, slice into squares and garnish with fresh strawberries if desired.

Notes
