Cake Ingredients

  • 1 box Yellow cake mix
  • 1 container Coconut pecan frosting
  • 2/3 cup Oil
  • 1 cup Water
  • 4 large Eggs
  • 1/2 cup Pecans, finely chopped

Topping Ingredients

  • 2 tablespoons Butter, unsalted
  • 1 can Sweetened condensed milk (14 oz)
  • 1 cup Pecans, chopped

Preparation

  • Preheat the oven to the temperature specified on the cake mix box.
  • In a large mixing bowl, blend the cake mix, coconut pecan frosting, oil, water, and eggs until smooth.
  • Fold in the finely chopped pecans.
  • Pour the batter into a well-greased 9×13-inch baking dish.

Baking

  • Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.

Topping

  • While the cake is baking, make the topping: in a pot over medium heat, melt the butter and sweetened condensed milk until smooth.
  • Remove from heat and stir in the chopped pecans.
  • Immediately spread the warm topping over the cake.

Serving

  • Serve the cake warm, sliced into squares, optionally with vanilla ice cream or whipped cream.

Notes

Make sure to grease your baking dish well to avoid any sticking. For enhanced flavor, consider toasting the pecans. You may add salt to the topping mixture for a sweet and salty balance.
