Ingredients
  

For the Pie Filling
  • 1/2 cup brown sugar, packed
  • 2 tbsp heavy cream
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 tbsp corn syrup or maple syrup for a twist
  • 1 pinch salt
  • 2/3 cup chopped pecans
For the Cookie Base
  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1 tbsp whole milk
  • 1 1/3 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • Melted dark chocolate for drizzling (optional)
  • Extra pecans for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mix together the brown sugar, heavy cream, egg, vanilla extract, corn syrup, and a pinch of salt until well combined.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg yolk, additional vanilla extract, and milk to the butter mixture, blending until smooth.
  5. In a separate bowl, combine the flour, baking soda, baking powder, and salt. Gradually mix into the butter mixture until just combined.
  6. Fold in the pecans and syrup mixture until evenly distributed.
  7. Drop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them apart.
Baking
  1. Bake for 10-12 minutes or until lightly golden around the edges.
  2. For an indulgent twist, drizzle melted dark chocolate over the cookies and top with extra pecans while still warm.
  3. Let cool before serving to ensure they hold their shape.
