Ingredients
  

Dough Ingredients
  • 5 cups unbleached all-purpose flour (divided) (divided)
  • 1.5 teaspoons kosher salt
  • 1 tablespoon active dry yeast (10 grams)
  • 1/3 cup granulated sugar (63 grams)
  • 1 cup whole milk heating to 100℉
  • 1/2 cup unsalted butter (room temperature) + 1 tablespoon for buttering the baking dish
  • 3 large eggs (room temperature)
  • 1/2 cup heavy cream (heated to 100℉)
Filling Ingredients
  • 1.5 cups packed dark brown sugar (300 grams)
  • 2 tablespoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon kosher salt
  • 12 tablespoons unsalted butter (softened, about 75℉)
  • 1 cup pecans (toasted and chopped, 114 grams)
Icing Ingredients
  • 1.5 cups powdered sugar (sifted, 170 grams)
  • 8 tablespoons unsalted butter (softened)
  • 1-2 tablespoons whole milk

Method
 

Preparation
  1. Butter the bottom and sides of a 13 x 9-inch baking dish with 1 tablespoon of butter, and optionally line with parchment paper.
Dough Preparation
  1. In a large bowl, mix 2 cups of flour, salt, yeast, and sugar. Warm the milk to about 100℉ and mix it in along with softened butter and eggs.
  2. Gradually add the remaining flour until the dough forms, then knead for 6-8 minutes until smooth and elastic.
  3. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size (1 to 1.5 hours).
Filling Preparation
  1. In a small bowl, mix dark brown sugar, cinnamon, nutmeg, and salt. Soften remaining butter to spread on rolled dough.
Assembly
  1. Once dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick.
  2. Spread softened butter over the rolled dough, then sprinkle the cinnamon-sugar mixture evenly on top. Lastly, add chopped pecans.
  3. Roll the dough tightly into a log and cut into 12 equal slices, placing them in the prepared baking dish.
  4. Cover the dish and let rolls rise again until they puff up (30-45 minutes).
Baking
  1. Preheat the oven to 350℉ (175℃) and bake the rolls for about 25-30 minutes or until golden brown.
Icing
  1. Mix powdered sugar, softened butter, and milk to create icing. Adjust milk for desired thickness.
  2. Drizzle icing over rolls while they’re still warm.
