  • 1/2 cup peanut butter (smooth or chunky) Your choice of smooth or chunky peanut butter.
  • 1/2 cup butter
  • 2 cups granulated sugar
  • 1/2 cup cold milk
  • 3 1/2 cups quick cooking oats
  • 1 tablespoon vanilla extract

Method
 

Preparation
  1. In a heavy-bottomed pot, add the butter, sugar, and cold milk.
  2. Cook over medium heat, stirring constantly, until the mixture comes to a rolling boil. Let it boil for 1 minute while continuing to stir.
  3. Remove the pot from heat. Stir in the peanut butter and vanilla extract until smooth.
  4. Mix in the quick cooking oats until they’re evenly coated.
  5. Using a spoon, scoop out the mixture onto a piece of parchment paper.
  6. Allow the cookies to cool at room temperature until firm – then they’re ready to enjoy!
