- In a heavy-bottomed pot, add the butter, sugar, and cold milk.
- Cook over medium heat, stirring constantly, until the mixture comes to a rolling boil. Let it boil for 1 minute while continuing to stir.
- Remove the pot from heat. Stir in the peanut butter and vanilla extract until smooth.
- Mix in the quick cooking oats until they’re evenly coated.
- Using a spoon, scoop out the mixture onto a piece of parchment paper.
- Allow the cookies to cool at room temperature until firm – then they’re ready to enjoy!
