  • 1/2 cup peanut butter
  • 1/2 cup butter
  • 2 cups granulated sugar
  • 1/2 cup cold milk
  • 3 1/2 cups quick cooking oats Can substitute with gluten-free oats
  • 1 tablespoon vanilla extract

Method
 

Preparation
  1. In a heavy-bottomed pot, add your butter, sugar, and cold milk.
  2. Heat over medium heat and bring to a rolling boil. Continue stirring constantly for about one minute.
  3. Remove the pot from the heat and add the peanut butter and vanilla extract. Mix until smooth.
  4. Gradually stir in the oats until fully combined.
  5. Use a spoon to scoop the cookie mixture and drop it onto a piece of parchment paper.
  6. Allow the cookies to cool until they firm up.
