Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the peanut butter and brown sugar until smooth.
- Add the eggs, baking soda, vanilla extract, and salt, and mix until well combined.
- Stir in the oats, chocolate chips, and shredded coconut.
- Drop spoonfuls of the dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden.
- Allow cooling on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
