  • 1 cup oats Old-fashioned oats recommended.
  • 1 cup chocolate chips Can substitute half for dried fruit.
  • 1 cup shredded coconut
  • 2 large eggs Can substitute with flax eggs for a vegan option.
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the peanut butter and brown sugar until smooth.
  3. Add the eggs, baking soda, vanilla extract, and salt, and mix until well combined.
  4. Stir in the oats, chocolate chips, and shredded coconut.
  5. Drop spoonfuls of the dough onto a lined baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are golden.
  7. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
