- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, stir together peanut butter and sugar until smooth.
- Add the egg, baking soda, and vanilla extract. Mix until a cohesive dough forms.
- Use a tablespoon or small cookie scoop to portion dough onto the prepared sheet, spacing about 2 inches apart.
- Press each ball gently with a fork in a crisscross pattern to flatten slightly.
- Bake for 8–10 minutes. Edges should be lightly golden while centers remain soft.
- Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to finish cooling.
