  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup unsalted butter
  • 1/2 teaspoon salt
  • 1 cup unsalted peanuts
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Preparation

  • In a large saucepan, combine the sugar, corn syrup, and butter over medium heat. Stir until the mixture comes to a rolling boil.
  • Once boiling, add the salt and continue to cook, stirring constantly, until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
  • Remove the saucepan from heat and quickly stir in the peanuts, baking soda, and vanilla extract.
  • Pour the mixture onto a greased baking sheet and spread it out evenly with a spatula.
  • Allow it to cool completely before breaking it into pieces. Enjoy!

Notes

Store your peanut brittle in an airtight container at room temperature for 2 to 3 weeks. Ensure it's kept away from humidity to maintain crispness. For added flavor, consider other nuts or a sprinkle of sea salt.
