  • 1/2 cup brown sugar Adjust based on the sweetness of the peaches.
  • 1 teaspoon cinnamon Can add nutmeg or ginger for extra flavor.
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
Wrappers
  • 8 egg roll wrappers
For Frying
  • Oil for frying Ensure oil is hot enough before frying.
  • Powdered sugar for dusting Dust just before serving.

Preparation
  1. In a saucepan, combine the peaches, brown sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens, then let it cool slightly.
  2. Lay an egg roll wrapper on a clean surface. Place a spoonful of the peach mixture in the center and roll it up tightly, sealing the edges with a bit of water.
Cooking
  1. Heat oil in a frying pan over medium heat. Fry the egg rolls until they’re golden brown on all sides.
  2. Drain the egg rolls on paper towels and dust with powdered sugar before serving.
