Ingredients
  

Peach Mixture
  • 2 cups fresh peaches, sliced (or 2 cups frozen or canned peaches, drained) Feel free to substitute fresh peaches with frozen or canned.
  • 1 cup sugar Divided into two parts, 1/2 cup for the peach mixture and 1/2 cup for the batter.
  • 1 teaspoon cinnamon A dash of nutmeg may add depth of flavor.
  • 1 tablespoon lemon juice Enhances the flavors of the peaches.
Batter Mixture
  • 1 cup all-purpose flour Can substitute with a gluten-free blend.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract Can substitute with almond extract for a unique flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches with 1/2 cup of sugar, cinnamon, and lemon juice.
  3. Pour the peach mixture into a greased baking dish.
  4. In another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
  5. Add the milk, melted butter, and vanilla to the dry ingredients. Stir until combined.
  6. Carefully pour the batter over the peach mixture in the baking dish without stirring.
Baking
  1. Bake for 30-35 minutes, or until the top is nicely golden brown.
Serving
  1. Serve warm, and top with vanilla ice cream, whipped cream, or toasted almonds, if desired.

Notes
