Ingredients
  

For the crust
  • 2.5 cups all-purpose flour
  • 4 tablespoons granulated sugar, divided 3 tablespoons for the crust, 1 tablespoon for sprinkling
  • 1 teaspoon salt
  • 1 cup shortening
  • 1 large egg
  • 0.25 cup cold water
  • 1 tablespoon melted butter For drizzling on top
For the filling
  • 3 pounds fresh peaches, peeled, pitted, and sliced Use ripe peaches for best flavor
  • 0.75 cup orange juice
  • 0.25 cup lemon juice
  • 0.5 cup butter Melted
  • 2 cups granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg

Method
 

Preparation
  1. Gather all your ingredients.
  2. In a medium bowl, sift together the flour, 3 tablespoons of sugar, and salt. Cut in the shortening until the mixture resembles coarse crumbs.
  3. In a small bowl, beat the egg with the cold water and sprinkle it over the flour mixture. Mix with your hands to form a ball of dough. Wrap in plastic wrap and refrigerate for about 30 minutes.
  4. Preheat the oven to 350°F (175°C). Roll out half of the chilled dough to about 1/8-inch thickness.
  5. Place the rolled dough into a 9x13 inch baking dish, covering the bottom and halfway up the sides. Bake for about 20 minutes until lightly golden.
Filling
  1. Combine sliced peaches, orange juice, and lemon juice in a large saucepan. Add melted butter and heat over medium-low until the butter melts.
  2. In another bowl, mix together sugar, cornstarch, cinnamon, and nutmeg, then add to the peach mixture until well combined. Pour over the pre-baked crust.
Assembly & Baking
  1. Roll out the remaining dough to about 1/4-inch thickness. Cut into 1/2 inch strips and weave over the peach filling. Sprinkle with the remaining sugar and drizzle melted butter on top.
  2. Place in the oven and bake for 35-40 minutes or until the topping is golden brown.
