Ingredients
  

For the batter

  • 1 cup peanut butter Use creamy or crunchy as preferred.
  • 1/2 cup butter, softened Ensure butter is softened for easier mixing.
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 2 cups mini marshmallows Adjust the amount if preferred.
  • 1 cup chopped peanuts Can replace with other nuts if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large bowl, mix together the peanut butter, butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs and vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt, then gradually add it to the peanut butter mixture until combined.
  • Fold in the mini marshmallows and chopped peanuts.

Baking

  • Pour the batter into the prepared baking pan, spreading it evenly.
  • Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  • Allow to cool before cutting into squares and serving.

Notes

These bars are great warm or at room temperature. Store leftovers in an airtight container at room temperature for up to a week, or refrigerate for about two weeks. For longer storage, freeze for up to three months.
