  • ½ tsp Onion Powder
  • ½ tsp Smoked Paprika
  • ½ tsp Salt
  • ¼ tsp Black Pepper

  • 2 medium Yellow Onions, thinly sliced
  • 2 tbsp Unsalted Butter for caramelizing
  • 1 tsp Olive Oil for cooking
For the Secret Sauce
  • ½ cup Mayonnaise
  • 2 tbsp Ketchup
  • 1 tbsp Yellow Mustard
  • 1 tbsp Pickles or Relish, finely diced
  • ½ tsp Smoked Paprika
  • ½ tsp Garlic Powder
For Assembly
  • 8 slices Rye Bread
  • 8 slices Swiss Cheese
  • 2 tbsp Butter, softened for grilling

Method

Caramelizing the Onions
  1. In a skillet over medium heat, melt 2 tablespoons of butter with 1 teaspoon of olive oil.
  2. Add the thinly sliced onions along with a pinch of salt. Cook until golden and caramelized, about 12-15 minutes.
  3. Remove from heat and set aside.
Preparing the Patties
  1. In a mixing bowl, combine the ground beef with Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Mix until well combined, then shape into 4 patties.
Cooking the Patties
  1. Heat the skillet to medium-high and cook the patties for 3-4 minutes on each side until browned and fully cooked.
  2. Remove from the skillet and keep warm.
Making the Secret Sauce
  1. In a bowl, mix mayonnaise, ketchup, yellow mustard, diced pickles, smoked paprika, and garlic powder until smooth. Set aside.
Assembling and Grilling
  1. Butter one side of each slice of rye bread, and on the unbuttered side, layer: one slice of bread, Swiss cheese, a beef patty, caramelized onions, secret sauce, another slice of Swiss cheese, and finally, another slice of buttered bread.
  2. In the heated skillet, place the assembled sandwich. Cook for 2-3 minutes on each side until the bread is golden brown and the cheese has melted. Press gently with a spatula.
Serving
  1. Serve immediately with fries or a pickle spear.

Notes

Great options for variations include using cheddar cheese instead of Swiss and different types of bread such as sourdough or brioche. For extra flavor, let beef sit with seasonings for 15 minutes before cooking.
