  • 2 tablespoons Olive oil
  • 12 ounces Smoked sausage, sliced
  • 1 medium Onion, chopped
  • 3 cloves Minced garlic
  • 2 cups Chicken broth
  • 14.5 ounces Canned diced tomatoes
  • 1 cup Heavy cream Can substitute with low-fat milk or Greek yogurt for a lighter dish.
  • to taste Pepper
  • 8 ounces Dry whole wheat bow tie pasta Can use any type of pasta.
  • 1 cup Shredded cheddar cheese For serving.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced smoked sausage and cook until browned.
  • Stir in chopped onion and minced garlic, and cook until the onion is translucent.
  • Add chicken broth and canned diced tomatoes to the skillet, bringing to a simmer.
  • Stir in heavy cream and season with pepper.
  • In a separate pot, cook the bow tie pasta according to package instructions until al dente.
  • Drain the pasta and add it to the skillet with the sauce, mixing well.
  • Serve hot, topped with shredded cheddar cheese.

Notes

For extra flavor, add Italian seasoning or crushed red pepper flakes. Feel free to add vegetables like spinach or bell peppers for added nutrition. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to a month.
