  • 3 medium zucchinis Washed, trimmed, and sliced into rounds
  • 1/2 cup finely grated Parmesan cheese Can substitute with Pecorino Romano for variation
  • 1/4 cup olive oil For coating the zucchini slices
  • to taste Salt For seasoning
  • to taste Freshly ground black pepper For seasoning

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or drizzle a light layer of oil.
  2. Wash the zucchinis, trim off the ends, and slice them into rounds about 1/8 to 1/4 inch thick.
  3. In a large bowl, toss zucchini slices with olive oil until they’re lightly coated.
  4. Season with salt and black pepper, then add the grated Parmesan. Toss gently to coat each slice evenly.
  5. Arrange the zucchini in a single layer on the prepared baking sheet.
  6. Bake for 10 to 15 minutes until the cheese melts and the edges begin to turn golden brown.
  7. If you want a more pronounced crunch and color, broil for 1-2 additional minutes, keeping a close eye to prevent burning.
  8. Remove from the oven and allow to cool for a minute before serving.
