  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (Italian or plain) Feel free to swap for gluten-free breadcrumbs.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream Consider using reduced-fat cream for a lighter option.
  • to taste Salt and pepper Season generously.
  • for garnish Fresh parsley

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, mix together the grated Parmesan cheese and breadcrumbs.
  3. Season the chicken breasts generously with salt and pepper.
  4. Dip each chicken breast into the breadcrumb mixture, pressing firmly to make sure the coating sticks.
Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the coated chicken breasts to the skillet, cooking until each side is golden and crispy (about 3-4 minutes per side).
  3. Once golden, transfer the chicken to a baking dish and bake for 15-20 minutes, or until fully cooked through.
  4. In the same skillet, add the minced garlic, sautéing for about 1 minute until fragrant.
  5. Pour in the heavy cream, allowing it to simmer until it thickens slightly (about 3-5 minutes).
  6. Drizzle the creamy garlic sauce over your crispy chicken and garnish with fresh parsley.

Notes

For maximum flavor, let the chicken marinate in olive oil, salt, and pepper for about 30 minutes before breading. Using a combination of Italian breadcrumbs with fresh Parmesan will enhance the dish's taste.
