Ingredients
  

For the crepes
  • 1 cup All-purpose flour
  • 1 tablespoon Granulated sugar
  • pinch Salt
  • 1 cup Milk Room temperature
  • 3/4 cup Sparkling water
  • 2 large Eggs Room temperature
  • 4 tablespoons Vegetable oil Plus 1 tsp for frying the first naleśnik
For the cheese filling
  • 1 pound Full-fat farmers cheese (twaróg)
  • 2 tablespoons Powdered sugar
  • 1 tablespoon Vanilla sugar

Method
 

Preparation
  1. In a large mixing bowl, combine flour, granulated sugar, and salt.
  2. Gradually add the milk and sparkling water while whisking to make a smooth batter.
  3. Mix in the eggs until everything is well combined.
  4. Let the batter rest for 15 minutes and prepare the filling.
  5. Just before cooking, stir in the oil or melted butter.
Cooking Crepes
  1. Heat a non-stick crepe pan or skillet over medium heat.
  2. Pour or scoop about 1/4 cup of batter onto the pan. Tilt the pan to spread the batter evenly.
  3. Cook the crepe until the bottom is light brown, about 2 minutes, then flip and cook the other side.
  4. Repeat with the remaining batter.
Prepare Filling and Serve
  1. In a bowl, mash the farmer’s cheese with powdered sugar and vanilla sugar until mixed.
  2. Spread each crepe with cheese filling, fold them into triangles or roll them up.
  3. Optionally, warm the filled crepes in the pan briefly.
  4. Serve the crepes dusted with powdered sugar or drizzled with maple syrup, along with seasonal fruits like strawberries, raspberries, or blueberries, and sweetened whipped cream if desired.

Notes

Use room temperature ingredients for a better mix. Letting the batter rest helps create fluffier crepes. For a richer taste, you can add a pinch of cinnamon or nutmeg to the cheese filling. If the batter is too thick, add a little more milk or sparkling water.
