Ingredients
  

Main Ingredients
  • 1 pound asparagus Choose firm, bright green asparagus.
  • 2 tablespoons olive oil Use a good quality olive oil.
  • 1/2 cup onions, sliced Yellow or white onions can be used.
  • 2 cloves garlic, minced Adjust amount to taste.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground is preferred.
  • 1/8 cup grated parmesan cheese Optional for topping.

Method
 

Preparation
  1. Place the asparagus on a cutting board and cut or break off the ends (about 1 inch) and discard.
  2. Cut the remaining stalks into 1 ½ inch pieces.
Cooking
  1. Heat a large skillet on medium-high heat and add the olive oil.
  2. Add the onions and cook on medium-high heat for 5 minutes or until softened.
  3. Add in the asparagus, salt, and pepper, and cook for 3-4 minutes or until the desired firmness.
  4. Add in the minced garlic and cook for another 30 seconds.
  5. Sprinkle with parmesan cheese and serve.

Notes

If you have leftovers, let the asparagus cool down, then place them in an airtight container. Store them in the refrigerator for up to 3 days. Reheat by sautéing in a pan for a couple of minutes until warmed through.
