  • 1 pound asparagus Choose fresh asparagus that is bright green and firm.
  • 2 tablespoons olive oil For cooking.
  • 1/2 cup onions, sliced Add more based on preference.
  • 2 cloves garlic, minced Adjust to taste.
  • 1/2 teaspoon salt To taste.
  • 1/4 teaspoon black pepper To taste.
  • 1/8 cup grated parmesan cheese Use more for serving if desired.

Cooking
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onions and sauté until they begin to soften.
  3. Add the minced garlic and cook for another minute.
  4. Add the asparagus, salt, and black pepper, and cook, stirring occasionally, until the asparagus is tender but still crisp, about 6-8 minutes.
  5. Remove from heat and sprinkle with grated parmesan cheese before serving.

Notes

To store leftovers, let the asparagus cool down and place it in an airtight container. You can keep it in the refrigerator for up to 3 days. To reheat, simply warm it in a skillet over low heat until heated through. You can also add crushed red pepper flakes for a spicy kick or use different cheese like feta or Grana Padano instead of parmesan.
