  • 1 pound asparagus Fresh, bright green, and firm
  • 2 tablespoons olive oil
  • 1/2 cup onions, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 cup grated parmesan cheese

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced onions and sauté until they begin to soften.
  • Add the minced garlic and cook for another minute.
  • Add the asparagus, salt, and black pepper, and cook, stirring occasionally, until the asparagus is tender but still crisp, about 6-8 minutes.
  • Remove from heat and sprinkle with grated parmesan cheese before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat. Adjust garlic and cheese to taste, and consider adding lemon juice before serving for extra flavor.
