Ingredients

For the casserole
  • 6 cups cinnamon rolls, cut into chunks Store-bought or homemade
  • 8 oz cream cheese, softened Can substitute with Greek yogurt or a dairy-free cream cheese alternative
  • 1/2 cup brown sugar
  • 8 large eggs
  • 2 cups milk Can substitute with almond milk for a lighter option
  • 1 tablespoon vanilla extract
  • 1/2 cup powdered sugar
  • 1/4 cup maple syrup

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Cut the cinnamon rolls into chunks and spread them evenly in the greased dish.
  3. In a mixing bowl, combine the softened cream cheese and brown sugar, mixing until smooth. Spread this mixture over the cinnamon rolls.
  4. In another bowl, whisk together the eggs, milk, and vanilla extract until well blended.
  5. Pour the egg mixture over the cinnamon rolls and cream cheese layer, ensuring all pieces are soaked.
  6. Cover the dish with plastic wrap and refrigerate overnight to let the flavors meld.
Baking
  1. The next morning, remove the dish from the fridge and bake it for about 45 minutes, or until set and golden brown.
  2. Once baked, allow it to cool slightly before dusting with powdered sugar and drizzling with maple syrup.
