  • to taste Salt and pepper Adjust according to preference.
  • 1 teaspoon garlic powder Enhances the flavor.
  • 1 teaspoon smoked paprika Adds a smoky flavor.
  • Fresh parsley for garnish (optional) Use if desired.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the baby potatoes, sliced smoked sausage, and sliced onion.
  3. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and smoked paprika. Toss until evenly coated.
  4. Spread the mixture in a single layer on a baking sheet.
Cooking
  1. Roast in the preheated oven for about 30-35 minutes or until the potatoes are tender and golden, stirring halfway through.
Serving
  1. Garnish with fresh parsley if desired and serve hot.
