Ingredients
  

For the crust
  • 1 box yellow cake mix (do not follow the box directions)
  • 2 large eggs for the crust
  • 12 tablespoons unsalted butter, melted and slightly cooled about 1 1/2 sticks
  • 1 teaspoon vanilla extract for the crust
For the topping
  • 1 8-ounce package cream cheese, softened full-fat gives the best texture
  • 1 large egg for the topping
  • 1 teaspoon vanilla extract for the topping
  • 3 cups powdered sugar, sifted if lumpy adjust to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9 x 13-inch baking pan with cooking spray.
  2. Make the crust: In a medium bowl, combine the yellow cake mix, 2 eggs, melted butter, and 1 teaspoon vanilla. Mix by hand until just combined into a thick, sticky dough.
  3. Press the crust into the prepared pan in an even layer. Use damp fingers or the bottom of a measuring cup to smooth and compact it.
Baking
  1. Make the topping: In a mixing bowl, beat the softened cream cheese until smooth. Add 1 egg and 1 teaspoon vanilla; beat until combined.
  2. Gradually add the powdered sugar and beat until silky and mostly lump-free. The mixture will be thick.
  3. Spread the topping evenly over the crust. Use a spatula to avoid tearing the base.
  4. Bake on the middle rack for 40–45 minutes. The edges should be set and lightly golden; the center may still jiggle slightly — it will firm as it cools.
  5. Cool completely on a wire rack, then refrigerate for at least 1 hour to improve slicing. Cut into squares and serve.

Notes
