  • 1 lb lean ground beef Use 93/7 for less fat
  • 1 yellow or sweet onion Finely diced
  • ¼ teaspoon kosher salt
  • cups chopped fresh broccoli
  • 1 red bell pepper Chopped
  • cups beef broth
  • 1 cup Jasmine rice Uncooked
  • 1 cup thick teriyaki sauce Using a high-quality sauce is recommended
  • 4 cloves garlic Minced or pressed, can use from jar or paste

Method
 

Cooking
  1. In a large skillet pan with a lid, add the ground beef, finely diced onion, and kosher salt. Cook and crumble over medium-high heat until the beef is no longer pink.
  2. Drain the excess grease from the skillet pan.
  3. Next, add the chopped broccoli, chopped red bell pepper, beef broth, jasmine rice, thick teriyaki sauce, and garlic. Stir to combine everything together and bring it to a boil.
  4. Once boiling, reduce the heat to medium-low and cover the skillet pan with a lid. Simmer for 20-25 minutes or until no liquid remains and the vegetables and rice are soft and tender. If your stove top heats hot, consider reducing the heat to low during the simmer time to avoid burning the rice.
  5. Garnish with sliced green onion, sesame seeds, and optionally, a drizzle of spicy mayo over top. This dish can also be served as a filling for lettuce cups.

Notes

For leftovers, allow to cool completely before transferring to an airtight container. It can be kept in the refrigerator for up to three days or frozen for up to three months. Reheat in the microwave or on the stovetop with a splash of water or broth to prevent drying out.
