  • 2 tablespoons Olive oil
  • 14 ounces Smoked sausage Sliced
  • 1 Onion Chopped
  • 2 cloves Minced garlic
  • 4 cups Chicken broth
  • 14.5 ounces Canned diced tomatoes
  • 1 cup Heavy cream
  • 1 teaspoon Pepper
  • 8 ounces Dry whole wheat bow tie pasta
  • 1 cup Shredded cheddar cheese For topping

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add sliced smoked sausage and cook until browned.
  • Add chopped onion and minced garlic, cooking until the onion is translucent.
  • Pour in chicken broth and canned diced tomatoes; bring to a simmer.

Cooking

  • Stir in the pasta, cover, and cook according to the pasta package instructions until al dente.
  • Add heavy cream and pepper; mix well.
  • Serve topped with shredded cheddar cheese.

Notes

Leftover pasta should be cooled completely before storing. Place it in an airtight container and store it in the refrigerator for up to 3 days. To reheat, warm it in the microwave or on the stove with a splash of chicken broth to keep it moist. You can use any type of smoked sausage you prefer and add vegetables for extra nutrition.
