  • 2 medium carrots, diced
  • 2 stalks celery, diced

  • 2 cups mixed vegetables (e.g., spinach, peas, zucchini) Feel free to use frozen mixed vegetables.
  • 1 cup heavy cream or coconut milk Use coconut milk for a vegan version.
  • 1 teaspoon dried thyme

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add in the chopped onions, diced carrots, and diced celery. Sauté these for about 5-7 minutes until they soften.
  3. Stir in the minced garlic and cook for another minute until fragrant.
Cooking
  1. Pour in the vegetable broth and bring the mixture to a boil.
  2. Add the mixed vegetables and the dried thyme, then reduce heat to a simmer and let cook for 15 minutes.
  3. After simmering, stir in the heavy cream or coconut milk and season with salt and pepper to taste.
  4. Allow it to cook for an additional 5 minutes. Serve hot, garnished with fresh herbs and a side of bread.
