Ingredients

For the Peach Filling
  • 6-7 pieces fresh peaches, peeled and sliced (or 2 cans sliced peaches, drained) Use ripe peaches for best flavor.
  • ½ cup packed brown sugar Can substitute with a mix of granulated sugar and molasses.
  • 1 tbsp lemon juice Freshly squeezed is recommended.
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 tsp cornstarch (optional for thicker filling)
  • 1 pinch salt
For the Cobbler Topping
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 cup granulated sugar
  • tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ½ cup unsalted butter, melted (1 stick)

Method

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish or similar deep dish.
  2. Make the Peach Filling: In a large bowl, toss together the sliced peaches, brown sugar, lemon juice, cinnamon, nutmeg, and a pinch of salt. If you’re opting for fresh peaches or prefer a thicker filling, mix in the cornstarch. Set this aside while you prepare the batter.
  3. Prepare the Batter: In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt. Pour in the milk and mix until smooth. Gradually whisk in the melted butter until combined.
Baking
  1. Assemble the Cobbler: Pour the batter into the prepared baking dish without stirring. Gently spoon the peach mixture (along with its juices) over the top, evenly spreading it out.
  2. Bake: Place it in the oven and bake uncovered for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the cake-like parts comes out clean. Allow it to cool for at least 15 minutes so the juices settle.
Serving
  1. Enjoy warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream on top!
