Preparation
- Preheat the Oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish or similar deep dish.
- Make the Peach Filling: In a large bowl, toss together the sliced peaches, brown sugar, lemon juice, cinnamon, nutmeg, and a pinch of salt. If you’re opting for fresh peaches or prefer a thicker filling, mix in the cornstarch. Set this aside while you prepare the batter.
- Prepare the Batter: In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt. Pour in the milk and mix until smooth. Gradually whisk in the melted butter until combined.
Baking
- Assemble the Cobbler: Pour the batter into the prepared baking dish without stirring. Gently spoon the peach mixture (along with its juices) over the top, evenly spreading it out.
- Bake: Place it in the oven and bake uncovered for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the cake-like parts comes out clean. Allow it to cool for at least 15 minutes so the juices settle.
